STRAWBERRY PIE

With our fresh-daily fruit pies, the Austin Grills have always celebrated the "Tex" side of our Tex-Mex roots. What better way to end a meal flavored with lusty chilies than with a thick slice of homemade Strawberry Pie!

Pie Crust- One 8" pie shell

  • 2 cups unbleached all-purpose flour
  • 2 tbs. sugar
  • 1/2 tsp. salt
  • 1/2 lb. butter, chopped
  • 1 egg yolk
  • 1/4 tsp. vanilla
  • 1/4 cup water

1. Preheat oven to 400 degrees.

2. Combine dry ingredients in a small mixing bowl. Add butter using an electric mixer.

3. Add wet ingredients and continue to mix until a heavy, dough consistency is achieved. Refrigerate for 1 hour.

4. Roll it out to 1/4 thickness and line an 8" pie pan.

5. Lower the temperature of the oven to 350 degrees and bake crust until golden.

Pie Filling

  • 3 baskets of washed, fresh strawberries, cut into halves
  • 1 cup cold water
  • 3 tbs. corn starch
  • 1 cup sugar

1. Take one basket of strawberries and mash them together with the corn starch, cold water and sugar.

2. Place over a low heat and cook slowly until very thick.

3. Refrigerate until cool and mix in the other two baskets of strawberries.

Whipped Cream

  • 2 cups heavy whipping cream
  • 1/4 cup of sugar
  • 1 tsp. vanilla

Using an electric mixer, whip together the cream, sugar and vanilla until stiff.

Fill the pie shell with the strawberry mixture and top with a thick layer of whipped cream.
