AUSTIN GRILL MIGAS Attention huevos fanatics! Serious egg-lovers will count this dish among the ranks of their favorites. Migas is Austin's unofficial weekend brunch or late night breakfast dish. Scrambled eggs, jeweled with sauteed Anaheim peppers, plum tomatoes, red onions, and a sprinkling of the tortilla chips which give the dish its name (in Spanish, Migas means "little crumbs"). Migas are traditionally served with refried beans and rice. Wrapped inside a warm flour tortilla, this is the epitome of comfort food. Great for lunch or dinner (eggs aren't just for breakfast anymore!) and easy to make at home, this is the perfect answer to chilly days. Ingredients:
1. Dice and saute the vegetables for 3 or 4 minutes. 2. Whisk the eggs in a bowl and pour into the pan, covering the vegetables. Scramble. 3. Sprinkle grated cheese over the top, and allow to melt. 4. Serve with refried beans and warm flour tortillas. Wrap up like tacos.
